I had a chuck last night! All I did was rub it down with olive oil and smoked paprika and let it sit for about 30 minutes. I then browned it in a heavy skillet and dropped it into a slow cooker. I deglazed the skillet with red wine and poured the sauce onto the roast, turned the cooker to high. 2 hours later... delicious! Or think slow cook bar-b-que!
